This varietal golden-yellow olive oil is cloudy with gentle shades of green. It features an intense vegetable scent with elegant notes of freshly cut grass and the distinguishable aroma of medicinal herbs, particularly mint and basil. The taste exudes complexity and elegance, with the vegetable aromas of lettuce, chicory, artichoke and sweet almond in the final notes. A bitter and spicy taste is present, and very harmoniously coordinated.

This oil goes perfectly with legume appetisers, marinated fish, vegetable pasta, pasta with molluscs and shellfish, baked fish, grilled white meat and medium-ripe cheeses.

The varietal Ascolana olive oil is an intense golden-yellow with greenish tones, and very clear. It features a pronounced scent of fruity tones - medium-ripe tomatoes, radishes, ripe apples and the intense addition of aromatic herbs reminiscent of sage, mint and oregano.

The taste is strong and abundant, and is characterised by its fruity and vegetable tones, bitterness and harmonious spiciness. It is excellent on crab marinades, seafood appetisers, chickpea cream soup, pasta with vegetables, light fish soups, steak tartare, and on fresh, soft mozzarella and similarly processed cheeses.

This varietal olive oil is clear with an intense golden-yellow colour. The fragrance is calm and fine with delicate vegetable notes and complex fruity tones: artichoke, wild St. John's wort, rosemary and sweet almond. The taste is gentle and harmonious with tones of mown grass, lettuce, wild chicory and dried fruit. It is bitter, spicy, restrained and very elegant.

It is ideal on steamed vegetables, au gratin vegetables, legume cream soups, pasta with molluscs and shellfish, roasted quality fish, stewed white meat and medium-ripe cheeses.

This varietal olive oil from Rosulja has a clear, intense golden-yellow colour with green tones. The scent is strong and very complex, delicate and with elegant notes of artichoke, freshly cut grass and pronounced balsamic tones of mint, basil and oregano.

The taste is fine and resolute, with abundant vegetable flavours of unripe tomatoes and final notes of celery and green almonds. It has a strong bitterness and restrained piquancy.

It goes perfectly with grilled red chicory, and is great on beef carpaccio with mushrooms, vegetable soups, pasta with molluscs and shellfish, baked fish, baked red meat and hard cheeses.

The Bjelica varietal olive oil is clear with an intense golden-yellow colour and warm green notes. The scent is very complex, abundant with vegetable notes among which artichoke stands out, accompanied by wild St. John's wort, freshly mown grass and an elegant final note of rosemary.

The taste is fine and very strong with a pronounced vegetable flavour of wild herbs, chicory, artichoke and green almonds, with a distinctive bitterness and elegant spiciness.

It is excellent on roasted porcini mushrooms, gratinated blue fish, buckwheat pasta, warm vegetable appetisers, roasted fish, stewed red meat and venison dishes, and on hard cheeses.

The varietal olive oil Pendolino is characterised by its light green to golden-yellow colour. It has a strong fruity scent which resembles freshly cut clover, artichokes and refined almonds. This variety is primarily an olive pollinator, and for these reasons its extraordinary oil properties have been unfairly neglected. It does not usually bear large quantities, but is therefore resistant to most diseases and pests that plague other olive varieties, so its fruit is usually of very high quality. It is a harmonious, light and fresh oil of excellent quality with a very mild bitterness and spiciness.

It beautifully complements cream soups and enhances the taste of venison and steak, including rump steak.

The varietal olive oil Frantoio is a highly valued, top-quality olive oil which stands out thanks to its light green colour, its fruity aroma with a dominant taste of green olives, almonds and aromatic herbs, its moderate bitterness and strong spiciness. Such a dominant oil is the best addition to dishes of intense taste and aroma such as beefsteak, truffles, venison, goose liver, spicy and hard cheeses and wild asparagus, with which a new and magical combination of tasting pleasures is created.

This variety also complements marinated tuna, mushroom salad, oven-cooked fish, roasted red meat and mature cheeses.

It is a highly valued variety due to its exceptional oil quality. If the harvest is done when the fruits are wine-red in colour, it gives the oil a pronounced fruity scent of olive fruits, as well as a pleasant bitterness and spiciness. The fruits of this variety can also be used for canning.

This clear varietal olive oil has an intense green colour with yellow and golden shades. It features an abundant and strong aroma with complex fruity tones of medium-ripe tomatoes, lettuce, freshly mown grass and unripe bananas. Its balsamic flavour includes mint, basil, oregano and especially sage. It is gentle and very harmonious with the fruity tones of tomato and almond. Its bitterness and piquancy are resolute, but balanced.

It is excellent on raw meat carpaccio with Caesar's mushrooms, gratinated blue fish, legume pasta, pasta with crab, stewed fish, grilled red meat and venison, and hard cheeses.

Our extra virgin Blend is created by mixing several indigenous olive varieties (monocultures). The aim is to extract the best and most emblematic aspects of each singular variety, which makes Al Torcio’s Blend oil extremely rich and complex. The oil is rich in refined scents of freshly mown green grass, aromatic herbs and green tomatoes. It is characterised by a balanced bitterness and piquancy combined into a harmonious composition.

The Al Torcio Blend can be paired with all types of dishes, and goes best with traditional Istrian cuisine.
