The Al Torcio oil mill uses the latest and most sophisticated technology, guaranteeing the highest quality extra virgin olive oil with approximately 30% more polyphenols and the highest yield per unit weight.
The application of the latest technology on the market today - DMF by Pieralisi and mixers from the Molinova ORO series - when combined with a mill, enables cooling of the olive paste with water. No water is added during the processing, but instead is extracted by the separator, so the polyphenols contained in the olive paste do not dissolve in water as they did in the old plant. Therefore, the oil retains up to 30% more polyphenols with this new method.
Our special feature is the certificate we have obtained for organic production. Four malaxing units can process four batches of oil from four different manufacturers. It also allows for cleaning of the system between each processing. This enables us to avoid the production of waste from previous producers and gives each olive grower their own pure, organic oil.
